Canning

Over the past several years my mom has been in Utah during peach season and has taught me and my sister Beth the art of canning. It has become a bit of a tradition. This year my sister Beth and I were able to bottle some beautiful peaches a few weeks ago and last night my neighbor Angie had lots and lots of apples she wanted to do something with. Having never done applesauce I figured it would be fun to figure out.

Here are the stats:
Peaches-56 quarts
Time-A Lot (4.5 hours to get the fruit in the jars and then a 2-3 more to hot bath them all with a transport trip from Provo to West Jordan in between.)
Energy Level-by the end...none!
Apple Sauce-21 quarts, 5 pints
Time-5 hours from start to finish
Energy Level-Still go by the end but it sure felt good to sit down.

**Tips for Canning** Grab a friend to can with other wise it's not worth it!!

  1. There are beautiful looking Peaches and Apple Sauce. I do wonder how difficult Apple Sauce was. I wish I had enough tomato's to can them.
